Instructions:

Wash and chop the romaine lettuce, then place it in a large salad bowl

In a small bowl, mix the paleo Caesar dressing with nutritional yeast for a cheesy flavor

Adjust salt and pepper to taste

Toss the lettuce with the Caesar dressing until well coated

  • 1/4 cup red onion, thinly sliced

Set your oven to 475F 245C before you start cooking

Make the pizza dough as big as your pan or pizza stone

Spread the pizza sauce out on the dough in a thin layer

Put half of the mozzarella cheese shreds on top of the sauce

On top of the cheese, put the zucchini, red onion, yellow bell pepper, and cherry tomatoes

Add the rest of the mozzarella cheese on top of the vegetables

Put olive oil on the pizza and salt and pepper it to taste

Put the pizza stone or skillet in the oven that has been heated up

Bake for 12 to 15 minutes, or until the cheese is bubbling and the crust is golden

Take the pizza out of the oven and add fresh basil leaves on top

Cut it up and serve it hot

Chocolate Stout Cupcakes w/ Vanilla Bean Buttercream

  • 2 large eggs
  • 2/3 cup sour cream
  • 1 tsp vanilla extract
  • For Vanilla Bean Buttercream:
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2-3 tbsp milk
  • 2 tsp vanilla bean paste
  • Pinch of salt

Instructions:

Warm up your oven to 350F 175C and put cupcake liners in a muffin tin

Melt the butter in a saucepan over medium-low heat

Add the stout beer and heat them together

Take it off the heat and mix in the cocoa powder with a whisk until it's smooth

Let it cool down a bit

Mix the flour, sugar, baking soda, and salt together in a different bowl

Mix the eggs, sour cream, and vanilla extract together in a different bowl by beating them well

Slowly add the stout mixture to the egg mixture while mixing it all the time

Mix the dry ingredients into the wet ingredients one at a time until the batter is smooth

The batter should be about two thirds of the way up each cupcake liner

Bake in an oven that has already been heated for 18 to 20 minutes, or until a toothpick stuck in the middle of a cupcake comes out clean

Take the cupcakes out of the oven and let them cool for a few minutes in the pan

Then, move them to a wire rack to cool completely

For the Vanilla Bean Buttercream, beat the butter until it is smooth

Put in milk, vanilla bean paste, powdered sugar, and a pinch of salt

Mix the ingredients together until they are smooth and fluffy

The Vanilla Bean Buttercream can be used to frost the cupcakes with a piping bag or a spatula after they are completely cool

Decorate the cupcakes however you like, then eat them!

Honey Almond Ricotta Stuffed Grilled Peaches

Carefully turn the peaches over and cook for three to four more minutes

Take them off the grill and give them a minute or two to cool down before serving

If you want, you can drizzle with more honey and top with more chopped almonds

Mix everything together well

  • 8 rice paper wrappers
  • 16 cooked large shrimp, peeled and deveined
  • 1 cup lettuce leaves
  • 1 cup fresh bean sprouts
  • 1/2 cucumber, julienned
  • 1/2 carrot, julienned
  • 1/4 cup fresh cilantro leaves
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh basil leaves
  • 1/4 cup crushed peanuts
  • For the Hoisin Peanut Dip:
  • 1/4 cup hoisin sauce
  • 2 tablespoons creamy peanut butter
  • 1 tablespoon rice vinegar
  • 1 clove garlic, minced
  • 1-2 tablespoons water for desired consistency

Instructions:

Prepare all the ingredients and set them aside

Fill a large shallow dish with warm water

Dip one rice paper wrapper into the water and rotate it for about 10-15 seconds or until it becomes soft and pliable

Place the softened rice paper wrapper on a clean surface or a damp kitchen towel

In the center of the wrapper, place 2 cooked shrimp, lettuce leaves, bean sprouts, cucumber, carrot, cilantro, mint, and basil leaves

Fold the sides of the wrapper over the filling, then fold the bottom of the wrapper over the sides and roll tightly to encase the filling

Repeat with the remaining wrappers and filling

For the Hoisin Peanut Dip, in a small bowl, whisk together hoisin sauce, peanut butter, rice vinegar, and minced garlic

Add water as needed to reach your desired dipping sauce consistency
