- 2 celery stalks, diced
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions:

Toss in the chopped onion, carrots, and celery
It will take about 5 minutes of sauting until the vegetables are soft
Cut up some garlic and add it
Cook for one more minute
Add the flour to the vegetables and mix them together
Cook for two minutes to get rid of the raw flour taste
Slowly add the chicken broth while stirring all the time to keep lumps from forming
Wild rice, cooked turkey, and dried thyme should all be added
Add pepper and salt
Let the flavors blend by simmering the soup for 15 to 20 minutes
Add the heavy cream and heat it all the way through, but don't let it boil
Check the seasoning and make changes if needed
If you want, you can serve it hot and top it with fresh herbs
