Refreshing and aromatic, these rosemary lemonade popsicles are the perfect summer treat with a unique herbal twist.
Ingredients:
- 2 cups freshly squeezed lemon juice
- 1 cup water
- 1 cup granulated sugar
- 2 sprigs fresh rosemary
- 1 tablespoon lemon zest
- 1/2 cup heavy cream
Instructions:
In a saucepan, combine water, sugar, and rosemary sprigs
Bring to a simmer over medium heat, stirring until sugar dissolves
Remove from heat and let cool completely
Once cooled, strain the rosemary-infused syrup into a bowl
Stir in lemon juice and lemon zest
In a separate bowl, whip the heavy cream until soft peaks form
Gently fold whipped cream into the lemon mixture until combined
Pour mixture into popsicle molds, insert sticks, and freeze for at least 4 hours or until solid
Once frozen, run molds under warm water for a few seconds to release popsicles
Serve and enjoy!
