Pumpkin Streusel Muffins



These Pumpkin Streusel Muffins are a perfect fall treat with a delightful crumbly topping and a moist pumpkin-spiced interior. Enjoy them with a cup of coffee or as a snack!

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp ground ginger
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • For Streusel Topping:
  • 1/4 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 2 tbsp unsalted butter cold and cubed
  • 1/2 tsp ground cinnamon

Instructions:

Warm your oven up to 350 ?F 175?C and put paper liners in a muffin tin

Whisk the flour, brown sugar, baking soda, baking powder, salt, and spices together in a large bowl

The pumpkin puree, vegetable oil, eggs, and vanilla extract should all be mixed together well in a different bowl

Add the wet ingredients to the dry ones and mix them together just until they are mixed

Do not mix too much

Fill up each muffin pan cup about two thirds of the way to the top with muffin batter

Mix the ground cinnamon, granulated sugar, cold butter cubes, and flour together to make the streusel topping

Mix the things together with a fork or a pastry cutter until they are crumbly

Cover all of the muffin batter with the streusel topping

After the oven is hot, bake the muffins for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean

First, let the muffins cool in the pan for a few minutes

Then, move them to a wire rack to cool completely
